CIEH Level 2 Award in Food Safety

CIEH qualifications have been developed to address the growing need to make learning more relevant to specific business environments and meet the National Occupational Standards.
This qualification is required by anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.
The objectives of this course are - to enable students to prepare food in a safe and hygienic way; to prevent
contamination from any source; to understand how to protect consumers from food poisoning and to be
familiar with current legislation, good practice and general food safety issues.

  • General introduction
  • The Law
  • Food Safety Hazards
  • Temperatures/their application to food safety
  • Refrigeration/Chilling/Cold holding
  • Principles of safe food storage
  • Food handlers and personal hygiene
  • Cleaning
  • Pest Control

    Everyone who works with food has a special responsibility for safeguarding the health of consumers and
    ensure that the food they serve or sell is perfectly safe to eat.
